Lisa's Tender Flufly Pancakes 1 cup flour 2 teaspoons sugar 1/4 to 1/2 teaspoon salt 1/2 teaspoon baking powder 1/4 teaspoon baking soda 3/4 cup buttermilk 1/4 cup milk 1 egg 2 tablespoons melted butter combine the dry ingredients in a bowl combine the wet ingredients in a second bowl add the wet ingredients to the dry ingredients mix until they are just combine (a few lumps are ok - don't over work or you will develop the glutin and they will be tough). Cook in a frying pan, no oil needed. Form into small pancakes, drop a large spoonful so that it makes a puddle about ~3 inches in diameter. Cook until golden brown on the bottom flip and cook until the other side is golden brown. Adjust temp as needed.
