Home Made Ginger Ale -------------------- 1 lb fresh ginger, unpeeled & cut into small dice 2 stalks lemon grass, trimmed & roughly chopped 2 small fresh chiles, stems removed - Combine in food processor until minced, stopping periodically to scrape sides if necessary. - Place puree in saucepan with 1 1/2 cups sugar & 1 quart water. - Bring to a boil over high heat, then reduce heat to medium and simmer for 15 minutes. - Turn off heat, cool, strain and chill. - Serve about 1/4 cup mix in a glass of club soda.
